Ingredients

  • For the Vinaigrette:
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • cup olive oil
  • 2 garlic cloves, minced
  • 1 tsp Fresh or dried thyme
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tbsp maple syrup
  • Salt and pepper to taste
  • ½ tsp dried Italian seasoning
  • For the Salad:
  • 2 cups kale, chopped
  • 2 cups spring mix
  • 1 cup arugula
  • ½ pear, thinly sliced
  • ½ apple, thinly sliced
  • ¼ cup pecans
  • 2 tbsp pumpkin seeds
  • 2 tbsp sliced almonds
  • 1-2 cups roasted sweet potatoes, diced
  • ½ cup feta cheese, crumbled

Instructions

  • 1. Prepare the Vinaigrette:
    Combine apple cider vinegar, Dijon mustard, olive oil, garlic, dried thyme, lemon zest, lemon juice, maple syrup, salt, and pepper in a jar. Seal and shake vigorously until emulsified. Set aside.
