- 1 lb Ground Pork
- Salt and pepper to taste
- 1 Tbsp Italian seasoning
- 1 Tsp Chili Flakes
- 1 Can Tomato Paste (156ML/5.5oz)
- 2 Cans Diced Tomatoes
- 900 ML Beef Stock
- 250 G Lasagna Sheets
- 1 Cup Heavy Cream
- 1 Cup Mozzarella Cheese
- ½ Cup Parmesan Cheese
- ½ Cup Ricotta Cheese
- 150 G Spinach
- ½ Bundle Parsley, chopped
- 50 G Fresh Basil, torn into small pieces
Instructions
- Brown the Beef:In a large pot or Dutch oven, brown the ground beef over medium-high heat. Break it into small pieces as it cooks.
- Sauté Onions and Garlic:Add chopped onions and minced garlic to the pot with the beef. Sauté for about 2-3 minutes until the onions are translucent.
- Add Tomatoes and Broth:Stir in the crushed tomatoes, diced tomatoes, beef or vegetable broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
- Simmer:Once the soup is boiling, reduce the heat to low and let it simmer for about 20 minutes. This allows the flavours to meld together.
- Cook the Noodles:Add the broken lasagna noodles to the soup. Continue to simmer for an additional 10-12 minutes or until the noodles are tender. Stir occasionally to prevent sticking.
- Cheese:When the noodles are almost finished, add ricotta cheese and grated Parmesan cheese and mozzarella cheese to the pot.
- Serve:Once the noodles are tender, serve the soup in individual bowls. Add a dollop of Ricotta to each bowl and top with shredded mozzarella cheese.
- Garnish:For an extra touch of freshness, garnish with fresh basil or parsley if desired.
