Ingredients
  

  • 2 Chicken Breasts, butterflied and pounded thin
  • Mozzarella, sliced
  • ½ cup Parmesan
  • Parsley, finely chopped
  • 2 Cups Flour
  • 3 Eggs, beaten
  • 2 Cups Italian Breadcrumbs
  • 1 Onion, finely chopped
  • 3-4 Garlic cloves, minced
  • ½ Tbsp Red pepper flakes (adjust to taste)
  • ½ Cup Vodka
  • 1 Can Tomato Paste (156ML/5.5oz)
  • 2-3 Tbsp Butter
  • ½ Cup Heavy Cream
  • Salt and black pepper to taste

Instructions
 

  • Sauté the Aromatics
    In a large skillet, heat the olive oil over medium heat.
    Add the chopped onion and sauté for about 3 minutes until it becomes translucent.
    Add red pepper flakes and minced garlic and cook for an additional 30 seconds until fragrant.
  • Create the Sauce
    Remove the skillet from the heat and carefully pour in the vodka. Return it to the heat and simmer for about 5 minutes, allowing the alcohol to evaporate.
    Add the tomato paste and simmer for another 5 minutes, stirring occasionally
    Reduce the heat to low, then pour in the heavy cream and stir until well combined. Simmer for an additional 5 minutes.
    Season the sauce with salt and black pepper to taste.
  • Preheat the Oven:
    Preheat your oven to 375°F (190°C).
  • Prepare the Chicken:
    Lay out the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch. This helps them cook evenly .Season the chicken with salt and pepper on both sides.
  • Dredge the Chicken:
    In three separate shallow dishes, place the flour in one, whisked eggs in another, and a mixture of breadcrumbs and grated Parmesan cheese in the third. Coat each chicken breast with flour, shaking off any excess. Dip them into the beaten eggs, allowing any excess to drip off. Press the chicken into the breadcrumb mixture, making sure it's well coated.
  • Fry the Chicken:
    Heat a large ovenproof skillet over medium-high heat and add enough olive oil to coat the bottom. Once the oil is hot, add the breaded chicken breasts and cook for about 5 minutes on each side until they are golden brown and crispy. Place the browned chicken on a plate lined with paper towels to remove any excess oil.
  • Assemble the Dish:
    On a baking tray, place the browned chicken breasts evenly. Spoon sauce over each chicken breast. Add the mozzarella cheese generously over each piece. Garnish with parsley and parmesan cheese. Transfer the tray to the preheated oven and bake for about 5-7 minutes or until the cheese is melted and bubbly, and the chicken is cooked through.
  • Serve:
    Remove the tray from the oven
    Serve hot, either as is or over cooked spaghetti or pasta of your choice.
