Ingredients
  

  • 12 Eggs
  • 1 cup Cottage cheese
  • 2 cups Cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 cup Cooked bacon, crumbled
  • ½ cup Green onions, chopped
  • 1 cup Cooked sausage, crumbled
  • ½ cup Bell peppers, diced
  • ½ cup Onions, diced
  • 1-2 Jalapeños, seeds removed and diced

Instructions
 

  • Prepare the egg mixture:
    In a blender, combine eggs, cottage cheese, 1 cup shredded cheddar cheese, salt, and pepper. Blend until smooth and fully mixed.
  • Prepare the muffin tins:
    Preheat your oven to 300°F (150°C). In a silicone muffin tin, add cooked bacon and green onion, jalapeños for 1 muffin pan . For the other muffin pan, add cooked sausage, diced peppers, and onions. Sprinkle 1 cup cheddar cheese on top of both mixtures
  • Fill with egg mixture:
    Pour the egg mixture over the fillings in each muffin cup, filling them about 3/4 of the way up.
  • Bake:
    Place the muffin tin in the preheated oven and bake for 30-35 minutes, or until the egg bites are set and slightly golden around the edges.
  • Serve & Store:
    Let them cool for a few minutes before removing from the silicone mold. These egg bites can be stored in the fridge for up to 5 days or frozen for up to a month for a quick, easy breakfast on the go!
