Easy Homemade Granola Recipe

- ⅔ cup Maple Syrup
- ⅔ cup Nut or Seed Butter
- 2-3 tsp Vanilla Extract
- 1 tsp Salt
- 3 tbsp Ground Cinnamon
- 4 cups Rolled Oats
- 1 cup Pumpkin Seeds
- 1 cup Slivered Almonds
- 1 cup Walnuts, chopped
- Unsweetened Coconut Flakes
- ⅔ cup Dried Fruit or Chocolate Chips (Optional)
Prep: Preheat the oven to 325°F. In a large bowl, whisk together maple syrup, nut/seed butter, vanilla extract, cinnamon, and salt until smooth.
Combine: Add the oats, pumpkin seeds, almonds, walnuts, and coconut. Mix until evenly coated.
Bake: Spread the mixture in a thin, even layer on a greased or lined baking tray. Bake on the bottom rack for 20 minutes. Remove, toss/flip, and bake for another 6-7 minutes.
Optional Add-Ins: Sprinkle dried fruit or chocolate chips over the hot granola. Stir gently to coat, melting the chocolate if desired.
Cool: Let the granola cool completely on the tray before serving or storing.
Store: Store in an airtight container at room temperature or in the fridge for up to a month.
