Ingredients
  

  • 1-2 Onions, chopped
  • 5-6 Garlic Cloves, minced
  • 4 leeks, white and light green parts only, washed and sliced
  • 4-5 Medium potatoes, peeled and diced
  • 3 Tbsp Olive Oil
  • 1 Bunch Fresh Thyme
  • 4 Cups Vegetable Stock
  • Salt and Pepper to taste
  • ½ Cup Heavy Cream (Optional)
  • Chopped chives or parsley for garnish (optional)

Instructions
 

  • Sauté the Vegetables
    In a Dutch oven or large pot, heat the olive oil over medium heat. Add the chopped leeks, onion, and garlic. Sauté for about 5 minutes, or until the vegetables become soft and translucent
  • Add Potatoes and Broth
    Stir in the diced potatoes and continue to cook for another 2-3 minutes. Pour in the vegetable broth, ensuring the potatoes are well-covered. Season with salt and pepper to taste.
  • Simmer Until Tender
    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the potatoes are tender and easily pierced with a fork.
  • Blend the Soup
    Turn off the heat and let the soup cool slightly. Using an immersion blender, carefully blend the soup until it's smooth and creamy. If you don't have an immersion blender, you can use a regular blender, but be sure to let the soup cool further before blending.
  • Finish with Cream (Optional)
    If desired, stir in the heavy cream to add richness to the soup. Heat the soup over low heat until it's warmed through.
  • Serve and Garnish
    Ladle the creamy Potato and Leek Soup into bowls.
    Garnish with chopped chives or parsley for a burst of freshness (optional).
    Serve hot with a slice of crusty bread or croutons.
    Note: You can make this soup vegan by substituting the butter with olive oil and omitting the heavy cream.
