Ingredients
  

  • 6-8 Sausages (Italian, chicken, or your favorite)
  • 4-5 Yukon gold potatoes, cut into 1-inch pieces
  • 4-5 Bell peppers (assorted colors), sliced
  • 2 red onions, thick slices
  • 8-10 Garlic cloves
  • ½ cup Beef broth
  • 1-2 tbsp Dried oregano
  • ½ Grated Parmigiano Reggiano
  • Olive oil
  • Salt and black pepper to taste

Instructions
 

  • Brown the Sausage: Heat a large skillet over medium-high heat. Add a drizzle of olive oil and brown the sausages on all sides until almost cooked. Remove from the pan and set aside.
  • Cook the Potatoes: In the same skillet, add more olive oil if needed. Brown the potatoes over medium heat for 8-10 minutes, stirring occasionally until golden. Remove and set aside.
  • Sauté Peppers and Onions: Add the bell peppers, onions, and garlic to the skillet. Cook for 5-7 minutes until softened and slightly caramelized. Season with salt and pepper.
  • Assemble: Preheat your oven to 375°F (190°C). Transfer the browned potatoes, sausages, and sautéed peppers and onions to a baking dish. Pour the beef broth evenly over the mixture and sprinkle with oregano. Mix
  • Bake: Bake uncovered for 25-30 minutes until everything is hot and bubbly.
  • Finish: Sprinkle Parmigiano Reggiano over the top and return to the oven for an additional 5 minutes
  • Serve: Enjoy hot with crusty bread or a simple green salad.
