  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 4-5 garlic cloves, unpeeled

  • Salt and pepper, to taste
  • Fresh or dried herbs (such as thyme, basil, or oregano)
  • 4 cups vegetable or chicken stock

  • Roast the Vegetables:
    Preheat your oven to 425°F (220°C). On a baking sheet, combine the cherry tomatoes, carrots, red bell pepper, onion, and garlic. Drizzle with olive oil and season with salt, pepper, and herbs of your choice. Toss everything together to coat the vegetables evenly. Roast in the oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  • Blend the Soup:
