- 2 Onion, finely chopped
- 3 Carrot, finely chopped
- 3 Celery stalk, finely chopped
- 6 Cloves of Garlic, minced½½½
- 2 Tbsp Butter
- 2 Tbsp Olive Oil
- ½ Lb Ground Beef
- ½ Lb Ground Pork
- 1 Can Tomato Paste (156ML/5.5oz)
- 1 Cup Red or White Wine
- ½ Cup Milk
- 2 Cans Crushed Tomatoes, or Tomato Sauce
- Salt and Pepper to taste
- Tagliatelle Pasta
- Parmesan Cheese to garnish
- Parsley to garnish

- Prepare the Bolognese Sauce:In a large skillet, heat the olive oil over medium heat.Add the onion, carrot, celery, and garlic. Sauté until softened.Add the ground beef and pork. Cook until browned and crumbled.Pour in the red wine and let it reduce by half. Pour in the milk Season with salt and pepper to taste.Add the crushed tomatoes and simmer for 2-3 hours over low heat.
- Cook the Tagliatelle:Boil the tagliatelle in salted water according to package directions .Drain and toss with a few ladles of the sauce and some pasta water
