Ingredients

  • 450 G Penne pasta
  • 2 Tbsp Olive oil
  • 1 Onion, finely chopped
  • 3-4 Garlic cloves, minced
  • ½ Tbsp Red pepper flakes (adjust to taste)
  • ½ Cup Vodka
  • 1 can Tomato Paste (156ML/5.5oz)
  • 2-3 Tbsp Butter
  • ½ Cup Heavy Cream
  • Salt and black pepper to taste
  • ½ Cup Grated Parmesan cheese

Instructions

  • Cook the Penne
    Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to the package instructions. Drain the pasta and set it aside.
  • Sauté the Aromatics
    In a large skillet, heat the olive oil over medium heat.
    Add the chopped onion and sauté for about 3 minutes until it becomes translucent.
    Add red pepper flakes and minced garlic and cook for an additional 30 seconds until fragrant.
  • Create the Sauce
    Remove the skillet from the heat and carefully pour in the vodka. Return it to the heat and simmer for about 5 minutes, allowing the alcohol to evaporate.
    Add the tomato paste and simmer for another 5 minutes, stirring occasionally
    Reduce the heat to low, then pour in the heavy cream and stir until well combined. Simmer for an additional 5 minutes.
    Season the sauce with salt and black pepper to taste.
  • Combine Pasta and Sauce
    Add the cooked penne pasta to the sauce and toss to coat the pasta evenly.
  • Serve and Garnish
    Transfer the Penne alla Vodka to serving plates.
    Garnish with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
