- 450 G Puff Pastry
- 1 Lb Ground Pork
- 4-5 Bacon strips, finely chopped
- 1 Onion, finely chopped
- 1 Celery stalk, finely chopped
- 2 Tbsp Minced garlic
- Salt and pepper to taste
- 1 Tbsp Dried thyme
- Tbsp Dried sage
- Tbsp Garlic powder
- 2 Tbsp Dijon Mustard
- 2 Eggs

- Prepare the Filling:In a large bowl, combine ground pork, chopped bacon, minced garlic, finely chopped onion, celery, dried thyme, dried sage, salt, pepper, and garlic powder. Add the eggs and Dijon Mustard to the pork mixture, mix the ingredients thoroughly until well combined.
- Assemble the Sausage Rolls:Roll out the puff pastry on a floured surface into a big rectangle. Cut into 2 strips. Add your pork mixture to a piping bag or large Ziplock bag (with the end cut off) Pipe half of the pork mixture on one of the puff pastry pieces.
- Roll and Seal:Fold the pastry over the filling, creating a roll shape.Press the edges to seal the sausage roll.Place the rolls on a baking sheet with the seam side down.Cut into 2 inch pieces
