  • Pastry brush
  • A Sharp Knife

Ingredients

  • 1 Package Phyllo Dough Sheets
  • 1 lb Fresh spinach leaves
  • 1 Block Feta cheese, crumbled
  • 1 Bunch Flat-Leaf Parsley, Finely Chopped
  • ½ Bunch Fresh Dill, Finely Chopped
  • 1-2 Bunches Green Onion, Diced
  • 1 Yellow Onion, Finely Diced
  • 2 Garlic Cloves, Finely Minced
  • 1 Tbsp Black Pepper
  • 3 Large Eggs,
  • ½ Cup Melted Butter

Instructions

  • Preheat oven to 350ºF/180ºC.
  • Prepare the Filling:
    Combine Spinach, Parsley, Dill, Feta, Onion, Green Onion, Garlic, Black Pepper, eggs into your large mixing bowl. Mix until combined. (Cook Spinach and drain if desired)
  • Layer the Phyllo Dough:
    Lay one sheet of phyllo dough in a greased baking dish, brushing it with your melted butter. Repeat this process, layering and brushing each sheet, until you have 6-7 layers.
  • Add the Filling:
    Spread the spinach and cheese mixture evenly over the phyllo dough layers.
  • Complete the Layers:
    Layer 6-7 more phyllo sheets on top of the filling, brushing each sheet with the melted butter. (Same instructions as in step #3)
  • Score the Top:
    Gently score the top layers of phyllo with a sharp knife, creating serving-sized portions.
  • Bake to Perfection:
    Bake the Spanakopita in your preheated oven until the top is golden brown and crispy. Typically this will take 45 minutes to 1 hour depending on your oven.
